Swedish Meatballs
 
Ingredients: 1 tbsp olive oil
1/2 red onion, minced
1 tsp salt
2 cloves of garlic or 1 tsp prepared minced garlic
1/2 tsp crushed red pepper
1/2 pound ground pork
1/2 pound ground veal
1/2 pound ground chuck
2 eggs
1 cup grated Parmesan cheese
1 cup Panko bread crumbs
2 tbsp butter
1 tbsp all purpose flour
1 1/4 cups chicken stock
1 tbsp mustard
2 tbsp Worcestershire sauce
1 tbsp honey
1 1/4 cups heavy cream
1 tsp dried parsley
salt and pepper to taste
 
Directions Coat saute pan with olive oil and cook salted onion until softened. The salt will pull moisture out of the onion. Add garlic and crushed red pepper and cook for another 2 minutes.

Combine meat, eggs, Parmesan cheese and bread crumbs in a large mixing bowl. Add onion mixture and season with salt and pepper. Mix well.

Preheat oven to 350 degrees.

Form meat into meatballs, brown on all sides in saute pan, then place on baking sheet. Bake in oven for 15 minutes.

Melt butter in saute pan. Add flour and stir on medium heat until mixture begins to darken. Add stock and mix well. Bring to boil, then lower heat to let simmer for 10 minutes. Add mustard, Worcestershire sauce, and honey. Mix well, allow to simmer for 1 or 2 minutes, then add meatballs and cream. Season with salt and pepper and allow to cook for a few minutes, then garnish with parsley.
