1 cup (2 sticks butter) softened
1 1/3 cup firmly packed brown sugar
1 teaspoon vanilla
1-1/2 cups all-purpose flour (190 grams)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old fashioned, uncooked, rolled oats (240 grams)
1 cup raisins (optional)
1 cup chopped walnuts (optional)
2 cups chocolate chips (optional)
Preheat oven to 350°F. In large bowl, cream butter and sugars together. Add eggs and vanilla. Combined flour, baking soda, cinnamon and salt and add to mixture. Add remaining ingredients; mix well.
Refrigerate dough for one hour so it's not as sticky.
Place dough in rounded tablespoonfuls onto ungreased baking sheet.
Bake 10 to 12 minutes or until golden brown.
