|Cheese Sauce - Vegan|
1 and 1/2 cups potato, peeled and cubed
1/2 cup carrot, diced
1 cup nutritional yeast
5 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon lemon juice
1 teaspoon smoked paprika
1/2 teaspon salt
3/4 tablespoon of Dijon mustard
Boil carrots and the potatoes until fork tender, then drain.
Transfer to a blender along with the rest of the ingredients and blend on high until smooth.
