|Gluten Free Bread for Bread Machine|
1 1/2 cups water at 110 degrees F
2 eggs at room temperature, lightly beaten
1 1/2 tablespoons vegetable oil
1 teaspoon cider vinegar
300 grams gluten free all purpose flour mix (with xanthan gum - I prefer Krusteaz)
1 teaspoon salt
1 teaspoon xanthan gum
3 tablespoons white sugar
1 tablespoon active dry yeast
Add salt to the eggs (to dillute the salt and prevent it from killing the yeast).
Place yeast water, salted eggs, oil, vinegar, flour, xanthan gum, sugar, and yeast, in that order, in your bread machine. Run the one hour or express cycle and select Light for the crust (if it gives you the option).
