Royal Icing
 
Ingredients: 500g confectioner's sugar
4 egg white
1/4 tsp kosher salt
1/4 tsp cream of tartar
 
Directions Beat egg whites with kosher salt and cream of tartar until smooth.

Slowly add sugar until combined, then mix on high for about 4 minutes, until frothy.

Add food coloring if desired, but try to use dry or gel, not liquid. (Colors will darken when the icing dries.)

Apply icing to cookies or whatever the final product will be.

Let dry for 6 hours, 24 if being stored.
