Red Lentil Curry
 
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
1 tbsp garlic
1 tbsp dark mustard
1/2 tsp ground corriander
1 tsp curry powder
1 tsp bround cumin
1/4 tsp salt
2/3 cup tomato paste
1 can coconut milk
1 cup red lentils
3 cups water
 
Directions
Bring water to a rolling boil.

Add all ingredients, which will cool the water and stop the boiling.

Bring back to boiling, reduce to simmer for 45 minutes, remove from heat.
