4 potatoes 2 carrots 1/4 cup olive oil 1 cup unsweetened almond milk 2 tbsp lemon juice 1 tsp garlic powder 1 tsp onion powder 1 tsp salt 1 tsp paprika 2 1/2 tbsp brown or dijon mustard 2 tsp soy sauce or tamari |

Combine the potato and carrot in a medium saucepan and cover with water. Bring to a boil and simmer for about 20 minutes, or until fork-tender. Drain and transfer to a food processor or power blender. Add all the other ingredients to the food processor and process for about 2 minutes, or until totally smooth. |
