Cream of Celery Soup
Ingredients: 1 1/2 cups chopped celery
1/4 cup chopped onion
1/4 cup chopped carrots
1 cup stock (broth) (or water)
2 1/2 cups whole milk
3 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
Directions Melt 2 tbsp butter in a deep skillet, wok, or stock pot. Add onion and salt (used to dehydrate the onion) and saute on high until onions are soft. Add flour and stir over medium heat until mixed and slightly darkened. Add Remaining ingredients and bring to a simmer. Cook for 10 minutes and remove from heat. Move to blender (in batches if necessary) and puree until very smooth. Return to heat and simmer for another 10 minutes.
