Barbecue Beef
Ingredients: 4 lbs cubed beef, pork or a combination of both
1/2 cup chili powder
4 small red onions
4 anchovie fillets (1/2 can)
2 (6 ounce) cans tomato paste
1 cup firmly packed brown sugar
1/2 cup balsamic vinegar
2 tablespoons dry mustard
2 tablespoons Worcestershire sauce
1 tablespoon salt
2 teaspoons black pepper
1 tablespoon garlic powder
1 teaspoon liquid smoke
1/4 cup lemon juice
Directions Liquify onions and anchovies in a food processor. Mix all ingredients in a slow cooker and cook between 210 and 250 degrees for 10 or more hours on low, stirring occasionally. The temperature needs to remain above 210 degrees F in order to break down the connective tissue. When done, shred meat with two forks or an electric mixer. Cook at least one more hour and serve on hamburger buns.
