Sugar Cookies
 
Ingredients:
1 cup sugar
2 sticks butter
2 eggs
1 teaspoon pure vanilla extract
3 cups all-purpose flour
 
Directions
Preheat oven to 350 degrees F.
In a mixer with a paddle attachment, cream the sugar and butter until smooth. Add the egg and the vanilla extract. Mix in the flour. Remove the dough from the mixer and press into a rectangular shape. Wrap in plastic wrap and refrigerate for at least 1 hour.

Remove from the refrigerator and cut dough into thirds. Roll out dough 1 piece at a time to a 3/16-inch thickness. Cut out as many cookies as possible. Repeat with all of the dough.

Place all of the cookies on parchment lined sheet pans. Bake in the oven for 10 to 15 minutes or until lightly golden brown.

Sugar Cookies

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
 
Directions
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
